It would seem to me that the fins that guide StarShip to the landing site are only used upon re-entry, so they are not needed when ascending to space. That begs the question of why not install them in orbit? At the same time the problems you are encountering with the heat shield tiles coming off during flight because of vibrations and thermal shock may also be solved if a heat shield of sorts is also installed in orbit. The fins and heat shield could still be re-used. Have fun exploring this idea. I hope it can bring us one tiny step closer to the great beyond. Ps.
