Basically, you need someone with experience in foundation support replacement. They'll basically put some tall jacks in there so you can get some proper supports. From there, you can hang trusses and whatnot. I can only guess at the local conditions and the engineering style, but I'd estimate about 1 vertical per 6 feet of ceiling. C-Trains are good for figuring areas and shapes, but they are made extremely cheaply.
