There is the not so minor problem of meeting common-carrier requirements. Your basic train, bus, or plane has to have emergency exits that take you to a safe place, outside of the vehicle and to a safe atmosphere. Awfully hard to do that when you're in a capsule, in a vacuum, down miles in the ocean, and down a ways into the rocks. Not gonna be approved. Underwater tunnels like the channel tunnel, they have escape routes, at normal air pressure to a maintenance tunnel. There's also the problem of cost. The channel tunnel cost about $9 billion. The undersea tunnel would be about 100 times as long. Even assuming the same construction costs, that would be easily one trillion dollars. Actually, it's going to take exponentially longer and cost exponentially more as you have to drag out the crushed rock all the way back thousands of miles. There's also the maintenance problem-- it's probably going to need refurbishment every 50 years or so. But the drilling speed is likely to be under 10Km per year, so it would take like 300 years to dig it out once. Meanwhile the existing tunnel would have to be refurbished like six times over.

I'm not saying this hyperloop under the Atlantic is a good idea. But IF they were to make anything even similar to it, it would probably go from Scotland to Faeroe Islands, and then to the east part of Iceland. Then it can cross over the midatlantic ridge on Iceland, and continue to Greenland and Canada. That route is also not nearly as deep as the route you were showing. Which means shorter cables, and more stability. I'm still not saying it's feasible. But at least it's a lot more feasible.
