Is it because there is a slight wobble. And because of lack of friction a continues moving in the direction of that wobble. And then when it hits that have rotation most of the angular momentum overtakes again and puts it in a another slight wobble

I feel it flips because the last push from the bolt causes an instability that after a while of acting like a gyroscope and the wierd winged shape of it it flips hard enough to rotate then act like a gyroscope again looping over and over

Pretty sure a wingnut isn’t entirely homogeneous in its composition, and the geometric dimensions are not perfectly symmetrical or balanced, so at some point its center of mass goes “off axis”, causing the 180 degree flip … and that same asymmetry causes it to stop its flipping motion, regaining some stability for a small period of time, before once again becoming unstable and flipping , and so on, and so on …
