My concern is, the detector acts as a measuring device within this scenario for the decay of the atom, the device observes and reacts. And the cat acts as the measuring device for the release of the cyanide, the cat observes and reacts. We may not know what the states are, but they do.

Then how chooses that cat be alive or dead. If it never get observed, that means it must be in superposition but the cat must have been dead after a very very long time. So there would be no effect of whether the cat is observed or not, as cat can't live forever and hence be dead.

Just because you don't know the state of something doesn't mean it becomes both possible states. The point of the thought experiment back then was to show the flaw in the Copenhagen interpretation and how absurd it was because a cat cannot be both alive and dead at the same time. Personally I also don't agree with decoherence theory where the cat, the air inside the box, and the poison mechanism act as observers themselves. This interaction with the environment causes quantum decoherence, forcing the quantum state to "choose" a reality almost instantly, long before a human ever opens the lid. I believe that all things exist in an actual reality, do not need any observer and happen based on cause and effect regardless of measurement, even if that measurement never actually occurs, and whether it can be proved or not doesn't actually matter until the measurement does occur.

Unless you're trying to say that everything that we don't sense with our 5 senses at real time stays in a superposition of probabilities.. it's only when we go and see them/that, that the wave function collapses and we see the thing we can with our eyes

the most mind-blowing part of Schrodinger's cat is that since it's tied to quantum superposition, the actually not dead, not alive, not either or both! quantum superposition basically means the position of the atom is completely unique, when atoms are fired in the two-split experiment it creates an interference pattern, so the atoms are not going through only slit 1, but they're also not going to only slit 2, they're ALSO not going through both the slits at the same time. their path is something you cannot demonstrate, that's why it's given it's own name. so the car it actually not dead,not alive, not either or both.
