Why use bipedal locomotion in concert with propellers? It would seem that 4 or 6 articulating legs would be more stable and allow for navigating in more challenging terrain than human-style legs.

I think people are missing the point of "it's not just a drone with legs". The "just" is key. It's a drone with proper robotic legs, that function like bipedal robots. You can add legs to a drone by just attaching a tripod to it. It is a drone with legs, just a more complicated arrangement of that.
