I think the bigger fridge it better, because there's plenty of food that doesn't need cooking. If it were me staying here for a week, I would bring stuff to make sandwiches, a gallon of milk, cereal, a tub of ice cream, etc. a mini fridge doesn't have the space for all that let alone a freezer section that either doesn't freeze the whole fridge or not keep the icecream cold.

I'd recommend having a single eye induction cooktop. It can be plugged into a standard outlet, and easily stores away when not in use.
We used one in a temporary kitchen during a renovation, and it was a great stopgap.
