Notice that you can see the 'steam' (really not steam but condensed previous vapor or it wouldn't be visible) above the coffee/tea cup. The rate of evaporation is driven by the difference in vapor pressure. Vapor pressure is driven largely by temperature. It is really that cooler ait is blocked because cooler air will have a lower vapor pressure and vapor will be transfered over well beyond the air's ability to hold the vapor as vapor...therefor condensing and being visibly noticed. This is why hot tubs lose water faster in the winter than in the summer. The summer air may be able to hold more water as vapor, but the transfer does not care about staying a vapor and is perfectly happy transferring to be seen as a fog. Hence lake effect snow/fog.

I don't want yo vomment on whether this is amazing or great or whatever, but I have issue with the claim and ratio. You say "standard" sunlight evapiration is horribly inefficient. with 40% efficiency. To me that is not horrible, 4% would be. Because now what you do with all this technology you are doubling the output. Yeah double is great, but it's not breathtaking, is it? You would get the same result by using double the surface... that's not too much. we are not talking about scaling 100fold or 10fold, but 'only' doubling and for that you will need high tech gear... instead of "just digging a bigger hole. So how is this a breakthrough that eill change the situation? I want it to be, I just don't see it.

It can't really be automated because if you do this to seawater you have to somehow get rid of the salt piles and extremely Concentrated leftovers pretty fast with an efficiency like that
