You should do the bakery! You have a niche. Ina Garten did it in the Hamptons & became very successful. In a way, your cooking reminds me of the natural simplicity of her, except yours is a holistic, vegan, healthy version. I don’t see anyone making these kinds of recipes on the cooking shows. I think your bakery would be a huge hit.

Swamp Rabbit Cafe in Greenville, South Carolina reminds me of the type place you would love. It's near the mountains, and a little warmer than your location. (Good for the winter.) Plus, they make an incredible bread called Stecca. Personally, I think this bread is what grew Swamp Rabbit into what it is today. Love your artistic videos.

In terms of your bakery dream (as others have suggested) look into cottage food law and see how much you can experiment at local farmers markets or supplying coffee shops before you jump in with a big investment. You might get lucky and be able to do a lot of (somewhat limited) stuff at home, for example in my state baked goods fall under cottage food as long as you make less than $25,000 and they don't need to be refrigerated. Or get a commentary kitchen, which will allow you to get your foot in the door, see if baking for production is something you want to pursue, etc. before getting too deeply invested. As someone who has dreamed and jumped big, and watched other people ESPECIALLY with farmers market, it looks like so much fun and so dreamy from the outside vs the day in and day out work it takes to keep the dream alive. I've done farmers market for five years, and a trend I've seen over and over is the first two or so markets have a lot of new vendors before they inevitably drop out because the idea of selling at farmers markets is a lot more fun than actually work that it takes to do it week after week. Especially bakers, who all enjoy baking for themselves, friends, family, etc. but baking on a commercial level is an entirely different ball game! If it is something that sets your heart on fire, by all means, please chase after it!
