There is a recent (2023) large study of women eating soaked and not soaked legumes and other food that have so called anti-nutriemts. 1st group soaked food. 2nd group did not soak. 1st group had far less nutrition in their test. 2nd group had much more nutrients. Outcome was that it's healthier not to soak those food except for softening.
