In honor of Asian American and Native Hawaiian Pacific Islander Heritage Month, learn about the intersection of food and culture in space from NASA astronaut Sunita "Suni" Williams, whose father immigrated to the U.S. from India, and International Space Station (ISS) food scientist/system manager Xulei Wu, a first-generation Asian American born in China. Hear their stories about cultural representation in space, the importance of food in Indian and Chinese cultures, and the inclusive standard menu aboard the ISS. Shout out to HUNCH(Highschool students United with NASA to Create Hardware) created and founded by NASA's own Stacy Hale ❤ if your kid isn't in a school with that program then they are missing out ❤ ​ISS knows the amazing contributions HUNCH has made, even if they don't know how hard Stacy Hale worked to make the program while it took NASA about 6-8 years to even recognize it officially.

So thankful for pioneers that had the forethought to realize that "space food" needed diverse cuisines. Dr. Selina Ahmed (Texas Southern University) was one pioneer who researched the nutrition, culinary process and proper packaging of diverse foods for space missions. She presented and discussed this in 1989 at one of the meetings in Huntsville Alabama. During Dr. Ahmed's presentation, the audience was somewhat noisy; several were bold to just interrupt and ask 'why is this important - how different foods are necessary if they survive in space or not?', or 'how was this funded and why is this discussed?' Sad to say that many in the room didn't consider that as the astronaut class became diverse on future STS missions (as ISS is being built and beyond!), so would the need for the cuisine. Dr. Ahmed maintained her poise during the presentation, but she was still shocked that the NASA funded work received such pessimism that day. A noted chemist who attended the session to listen looked annoyed as Dr. Ahmed addressed the (rude) questions. Dr. Bobby Wilson stood, walked to the front near Dr. Ahmed and addressed the audience. He stated the importance of her work and what she has endured lays the foundation for future scientists in this area; question the science as needed, but scientists in cosmic related work towards future space missions should NOT dwellon why it is needed. Most in the room that day were not of a diverse ethnicity so perhaps they thought the subject of international cuisine was irrelevant. After Dr. Wilson addressed the audience there was dead silence.... Dr. Ahmed calmly thanked Dr. Wilson; a few more questions followed (better toned ones 😅), and the session concluded with a few researchers going up to shake Dr. Ahmed's hand, and Dr. Ahmed went to thank Dr. Bobby Wilson for his comments that day. It's good to see how far Food Science and International cuisine in space has come since Huntsville Alabama 1989.
