You can cook with charcoal and it's easier to handle, more even heat. You can also cook on wood - it's a bit harder because of less even heating, but some like wood smokiness which depends on wood that you use. I always cook with wood, that's my preferred method, but both ways have their strong sides.

My husband has been smoking meat for a good few years, well before 40! We've all but stopped eating out, he can make meals as good or better between our Blackstone and smoker. Canola is absolute garbage for human health, never mind all the other toxic crap in a spray version. Use avocado oil for seasoning and/or animal fats for cooking in the future, they provide actual nutrition.

Simplest thing ever. Trim your brisket to have 1/4" max fat and squared up. Rub is equal parts salt pepper garlic powder, coat all surfaces till you think there is too much then put some more. 225°F cook temp fat side down unwrapped till you hit the stall around 170°F. Texas crutch foil wrap until you hit 204°F. Pull it and stick it in a cooler to rest for as long as you need until time to serve. Best central Texas brisket you can get, all the rest is fluff.

If you really want to smoke it, you should soak the wood before you burn it because it makes more smoke and less heat.
