A lower tech approach might be to put some food dye or some other dye/ink/paint into the cavity, preferably one that would stick to the gel. Maybe use a syringe to inject it, perhaps with some vinyl tubing to increase the reach that can be carefully fished into the cavity. Then you could dissect the gel in say 2 or 3 centimeter cross-sectioned slabs and measure the width of the cavity at intervals to see how far it traveled before opening.

Your design is similar to the Marden Vortex heads I have used for 25 years. If people are worried about them flopping open they can just put a small o-ring on the head, it will not interfere with opening.

This is not to criticize you or put you down, I truly love and support what you do, but most of your tests do not take bone into account, and that makes me question your claims of your repeating crossbows being well suited for self-defense, hunting and zombies. All vital organs are protected by bone, and if your crossbows can't make it through, they do not have the stopping power necessary for self-defense or ethical hunting kills. Sure they can kill if they hit certain areas, but that wouldn't immediately stop a threat, or be an ethical kill, and requires very precise aiming.
I would love to see a test against a pig's skull or even just a ribcage to show how it would fair in a more realistic scenario, I reckon such a test would be quite graphic, but there is no artificial substitute to true bone and flesh, plywood definitely isn't nearly as hard as bone, and ballistic gel doesn't really behave like flesh, especially when it comes to arrows.
I reckon that there may be limitations to the design, and more power would require more strength on the part of the user to cock the bow, but unless they can make it through bone, they are just slightly dangerous, albeit really fun, toys to play with at the range, and I think it wouldn't be wise to advertise them as self-defense/hunting tools.
I am sure that if the power isn't sufficient, some design improvements could be implemented with time, such as compound limbs, more efficient lever effect in the cocking mechanism, pulleys, or even electronic cocking systems, but the issue first needs to be addressed for that to happen.
Correct me if I am wrong, but from what I understand, what you want for your system isn't only to maximise sales, but also for it to continue evolving to reach its full potential, yet I feel like you omit power to allow for a broader range of users to be able to use your product, which is quite unfortunate, when you could be doing both.

I would highly recommend selling much BRIGHTER colours as well. If one misses the target (bird in a dense forest etc) it would be much easier to find the arrow. In a prolonged bug out survival scenario for example this is rather critical..

Recording suggestion: put camera to record top-down on the gel, that way it can record moment before hitting and also the opening inside gel. Also, maybe put some large diffused light under gel to illuminate better.
