Some may jump ship from the Old Order and become Mennonites, driving cars, using electric and tech, so on and so forth. Some Amish do own businesses that may use electric and tech, but never at the home, it's forbidden and they typically employe none Amish to operate said things. Also some communities may even have a phone booth but it will always be at the the edge of the property away from the homes. This doesn't apply to any of the Amish I am neighbors with, they are strict Old Order.

It is scary how silicon valley types like Andreessen think the entire world works like a start up. Andreessen is brilliant (in certain areas) but basically soulless. If you inject tech into industries that displace jobs, then yes, you need to still maintain those jobs. If AI is what some say it will be, then we need to also (rightfully so) get use to paying people when we replace their jobs so quickly with tech. Housing, Education & Healthcare have high prices.
Is it also to do with the fact that people view at least housing as investments? If technological innovation supercharges the housing sector, we have falling prices of houses.. that will be great for buyers.. but not so great for sellers.
Also, technology is not the only contributor to price rises.. oil price inflation is a contributor as an input cost addition.
As to why health care & education prices are soo astronomical, it will be fascinating to see what Elon can do to deregulate & its impact.
