For those that didn't follow, here's the recipe from the video:
**Quick Fusion Bruschetta with Tuna and Vanilla Chili**
**Ingredients:**
- 1 baguette, sliced and toasted

- 1 can of tuna, drained
- 1 chili, seeds removed and finely chopped

- Water chestnuts, sliced
- 1 egg
- Dijon mustard, 1 tablespoon
- Red wine vinegar, 1 tablespoon
- Roasted garlic, 2 cloves
- Fennel seeds, 1 teaspoon
- Chicken stock, 1/2 cup
- Coconut milk, 1/4 cup
- Chilies, chopped, to taste
**Instructions:**
1. **Prepare the Topping:**
- In a pan, sauté the leeks until soft. Add the chopped spring onions, tomatoes, and chili. Cook for a few minutes.
- Stir in the vanilla seeds, a pinch of turmeric, red onion, lime zest, a touch of pepper, and sugar. Cook until fragrant.
- Add the water chestnuts and cook for another minute. Set aside to cool.
2. **Cook the Steaks:**
- Season the sirloin steaks with salt and pepper. Sear them in a hot pan until cooked to your preference. Set aside to rest.
3. **Make the Ricotta Spread:**
- In a bowl, mix the ricotta cheese with the egg, Dijon mustard, and red wine vinegar. Add the roasted garlic, pressed through a sieve, and fennel seeds.
4. **Assemble the Bruschetta:**
- Spread the ricotta mixture on the toasted baguette slices.
- Top with the leek and tomato mixture.
- Add a slice of sirloin steak on top.
- Drizzle with a mixture of chicken stock and coconut milk for added flavor.
5. **Serve:**
- Arrange the bruschettas on a platter and serve immediately.

Interesting how despite this being one of the few channels I'm suscribed to with "ALL NOTIFICATIONS" on... i haven't gotten a single notification for an upload in the last week. Despite getting notifications for shit I'm not even subbed to and do not want to watch...
Even more interesting that for the last few days, I have found exactly ONE new video (that I wasn't notified about) from this channel in my feed at a time. And each time I go "oh wow, another one? I guess it makes sense he's uploading a bunch for the Animal Well release." Then scrolling forever, seeing nothing, only to find the next one after a phone reboot, or long break from youtube... "Holy cow, THREE videos that I never got notified about?"
And so and so forth. Not even sure how many it's been now and I don't want to go to the channel page to find out because I'm now fascinated by the pattern.
